
Pizzaiolo's Farfalle are a tasty and colorful first course made with farfalle pasta, eggplants, bell peppers and a delicious olive tomato sauce. Wash, trim and dice the eggplant and the bell pepper, then sauté them with oil, garlic and chili; when tender, season with salt
Cook the pasta and meanwhile heat the tomato sauce
Drain the pasta and toss it with 1 knob of butter and 3 tablespoons of grated Grana cheese
Transfer it in layers to a baking dish, alternating each layer with the olive tomato sauce, eggplant, peppers and diced mozzarella
Bake in the oven for 10 minutes and serve
