Fish canederli are a delicious dish of Italian tradition. Prepared with freshwater fish fillets, a hard-boiled egg yolk and softened bread rolls, they are enhanced by the fresh flavor of lemon and the aroma of parsley. They are perfect to enjoy as a first course.
Finely chop 250 g of freshwater fish fillets and combine them with 1 hard-boiled egg yolk, 1 raw whole egg, 25 g of butter, the grated zest of 1 lemon, 1 tablespoon of chopped parsley, the crumb of 2 bread rolls soaked in milk and squeezed, salt and pepper.
Mix the mixture well and, with floured hands, form many walnut-sized balls which will be boiled for 7 minutes in 3 L of salted boiling water, drained and immediately served covered with melted butter.
