Fish dumplings are a delicious dish from the Italian tradition. Made with freshwater fish fillets, hard-boiled egg yolk, and softened bread rolls, they are enriched with the fresh taste of lemon and the fragrance of parsley. They are perfect to enjoy as a first course.
Finely chop 250 g of freshwater fish fillets and mix them with 1 hard-boiled egg yolk, 1 raw whole egg, 25 g of butter, the grated zest of 1 lemon, 1 tablespoon of chopped parsley, the crumb of 2 bread rolls soaked in milk and squeezed, salt, and pepper.
Mix the ingredients well and with floured hands, form small balls the size of a walnut. Boil them for 7 minutes in 3 liters of salted boiling water, drain, and serve immediately covered with melted butter.
