
Fish canederli are a delicious dish from Italian tradition. Made with freshwater fish fillets, hard-boiled egg yolk, and softened rolls, they are enriched with the fresh taste of lemon and the fragrance of parsley. They are perfect to enjoy as a first course.


Finely chop 250 g of freshwater fish fillets and combine them with 1 hard-boiled egg yolk, 1 raw whole egg, 25 g of butter, the grated zest of 1 lemon, 1 tablespoon of chopped parsley, the soaked and squeezed crumb of 2 rolls, salt, and pepper.
Mix the mixture well and with floured hands form many balls the size of a walnut that will be boiled for 7 minutes in 3 liters of salted boiling water, drain and serve immediately covered with melted butter.
