Lard the meat with strips of lard, then wrap it in pancetta slices
Place it in a roasting pan with the sliced carrot and onion, aromatics, salt and olive oil
Bake at 200°C for one and a half hours, basting with broth
Remove the pancetta, slice the roast and serve it with the pureed cooking juices
