

Fried cardoons are a delicious crunchy side dish, typical of Italian cuisine. The cardoons are cleaned, boiled, and then fried in a pan with butter and garlic. Once golden, they are sprinkled with parsley and grated Parmesan cheese. This dish is perfect to enjoy hot and crunchy, perhaps accompanied by a fresh salad.






The cardoons should be completely peeled, leaving only the stalks cut into pieces of 5/6 cm
and boiled (about 30 minutes). They should then be placed in a pan where we have made a sauté of garlic, adding pepper, salt, parsley, and butter
Let it cook for 15 minutes and then add 1/2 liter of milk and continue cooking until the milk is consumed
At the end of cooking, a sprinkle of Parmesan cheese can be added
