Cook the fusilli until al dente in salted water
Meanwhile prepare the dressing
Wash and finely chop the basil together with the peeled garlic cloves
In a small pan warm the oil, add the chopped garlic and basil and let it infuse for just a few moments
Drain the pasta into a bowl, dress it with the Pecorino, the basil oil and a handful of pepper
Mix and serve
