Gado Gado is a traditional Indonesian dish made up of a variety of fresh vegetables, peanuts, and a sesame oil-based sauce. It is a dish rich in flavor and texture, perfect as a light and healthy side dish.
Clean the cabbage, wash it, remove the core and hard ribs, and cut it into strips
Wash and drain the cauliflower florets
Clean the green beans, wash them, drain them, and cut them into 4 cm pieces
Wash the bean sprouts and remove the green part
Clean and crush the garlic
Clean and finely chop the shallot
Heat two tablespoons of oil in a wok or large deep pan, add the cabbage, cauliflower, bean sprouts, and green beans, and stir-fry for three to five minutes
The vegetables should remain very crunchy
Remove the vegetables from the pan with a slotted spoon and place them on a serving dish
Let them cool
Heat two tablespoons of oil in a small saucepan, add the peanuts, and stir-fry over high heat, stirring constantly
When the peanuts are golden, dry them well with paper towels
Blend them together with the lemon juice until you get a smooth puree
Pour the rest of the oil into the same small saucepan and sauté the garlic and shallot for three to five minutes
Add the garlic and shallot to the peanut paste, optionally add more lemon juice, and mix well
To serve, heat the peanut sauce, pour it into a small bowl, and bring it to the table along with the cold vegetables
Serve this Indonesian dish on its own or as a side dish to chicken, lamb, or pork
