

Gado Gado is a traditional Indonesian dish made of a variety of fresh vegetables, peanuts and a sauce based on sesame oil. It is a dish rich in flavor and texture, perfect as a light and healthy side dish.
Trim the cabbage, wash it, remove the core and tough ribs, and slice it into thin strips
Wash and drain the cauliflower florets
Trim the green beans, wash and drain them, and cut them into 4 cm pieces
Wash the bean sprouts and remove the green tips
Prepare and crush the garlic
Peel and finely chop the shallot
Heat two tablespoons of oil in a wok or large deep frying pan, add the cabbage, cauliflower, bean sprouts and green beans, and stir-fry for three to five minutes
The vegetables should remain very crisp
Remove the vegetables from the pan with a slotted spoon and arrange them on a serving plate
Let cool
Heat two tablespoons of oil in a small saucepan, add the peanuts and fry them over very high heat, stirring constantly
When the peanuts are golden, drain them well on paper towels
Blend them together with the lemon juice until you obtain a smooth puree
Pour the remaining oil into the same small saucepan and sauté the garlic and shallot for three to five minutes
Add the garlic and shallot to the peanut paste, add more lemon juice if desired, and mix well

To serve, warm the peanut sauce, pour it into a small bowl and bring it to the table with the chilled vegetables
Serve this Indonesian dish on its own, or as a side dish to chicken, lamb or pork
