Galani are light and crispy pastry strips typical of the Venetian Carnival. They appear as thin, jagged strips of fried dough, dusted with powdered sugar. They are very similar to 'chiacchiere' but have a more crumbly and delightful texture. These sweets are usually prepared during the Carnival period and are served as a snack or dessert after meals. The recipe we offer is simple and quick to prepare, resulting in fragrant and irresistible galani.
Knead the flour with the eggs and the juice of the two oranges; mix well then add the butter previously melted in a bain-marie and a pinch of salt
Roll out the dough into a sheet and cut it into rather large squares or diamonds, then fry them in hot oil until golden
Drain the galani and place them to dry on kitchen paper
Before serving, dust them with powdered sugar
