Galani are thin, crispy pastry sheets typical of the Venetian Carnival. They appear as thin, jagged strips of fried pastry, sprinkled with icing sugar. They are very similar to chiacchiere but have a more crumbly and tasty texture. These sweets are usually prepared during Carnival and are served as a snack or a small dessert after meals. The recipe we offer is simple and quick to prepare, and the result is fragrant and irresistible galani.
Mix the flour with the eggs and the juice of the two oranges; blend well then add the butter previously melted in a double boiler and a pinch of salt
Roll the dough into a sheet, cut it into rather large squares or diamonds and fry them in hot oil until golden
Drain the galani and place them to dry on paper towels
Before serving dust with icing sugar
