Chop the vegetables and sauté them in oil in a terracotta pan
Coat the meat in flour and brown it, moistening it with wine
Dilute the tomato sauce in the broth and add the meat
Season with salt and cook over low heat
Cook for at least 2 hours over very low heat, adding more broth if necessary
