Partially freeze the piece of meat to make it easier to cut, then slice it into 1 cm thick slices
Divide each slice into strips and then cut these into cubes
Melt the butter in a saucepan and sauté the finely chopped onions over moderate heat for 3-4 minutes, stirring continuously with a wooden spoon
Sprinkle the sauté with a teaspoon of paprika and lower the heat to the minimum to allow the spicy powder to be absorbed by the seasoning and the onions
Be careful not to let it burn
Add the tomato paste, stirring carefully to mix it well, then pour in the vinegar
Salt the meat cubes and put them in the saucepan, then season everything with garlic, cumin, and marjoram
Pour enough water over the preparation to just cover it and let it cook over moderate heat in a covered pot for 20 minutes
After the indicated time, add the peeled and diced potatoes
Pour more water to cover the ingredients and transfer the stew to a preheated oven (150 degrees) in an uncovered saucepan for a couple of hours
