Preparation

  1. STEP 1 OF 10

Partially freeze the piece of meat to make it easier to cut, then slice it into 1 cm thick slices

  2. STEP 2 OF 10

Divide each slice into strips and then cut these into cubes

  3. STEP 3 OF 10

Melt the butter in a saucepan and sauté the finely chopped onions over moderate heat for 3-4 minutes, stirring continuously with a wooden spoon

  4. STEP 4 OF 10

Sprinkle the sauté with a teaspoon of paprika and lower the heat to a minimum to allow the spicy powder to be absorbed by the seasoning and onions

  5. STEP 5 OF 10

Be careful not to let it burn

  6. STEP 6 OF 10

Add the tomato paste, stirring carefully to mix it well, then pour in the vinegar

  7. STEP 7 OF 10

Salt the meat cubes and place them in the saucepan, then season everything with garlic, cumin, and marjoram

  8. STEP 8 OF 10

Pour enough water over the preparation to just cover it and let it cook over moderate heat in a covered pot for 20 minutes

  9. STEP 9 OF 10

After the indicated time, add the peeled and diced potatoes

  10. STEP 10 OF 10

Pour more water to cover the ingredients and transfer the stew to a preheated oven (150 degrees) in an uncovered saucepan for a couple of hours
