Partially freeze the piece of meat to make it easier to cut, then slice it into 1 cm thick slices
Cut each slice into strips and then cut the strips into cubes
Melt the butter in a casserole and sauté the finely chopped onions over medium heat for 3-4 minutes, stirring continuously with a wooden spoon
Sprinkle the sauté with one teaspoon of paprika and lower the heat to minimum to allow the powdered spice to be absorbed by the seasoning and the onions
Be careful not to let it burn
Add the tomato paste, mixing well to incorporate it, then pour in the vinegar
Season the meat cubes with salt and add them to the casserole, then flavor everything with garlic, cumin and marjoram
Pour enough water over the mixture to just cover it and cook over medium heat with the pot covered for 20 minutes
After the indicated time, add the peeled and diced potatoes
Add more water to cover the ingredients and transfer the stew to a preheated oven (150°C) uncovered for a couple of hours
