

Devil's Chicken is a succulent and spicy dish from the Calabria tradition. The chicken is marinated in a mixture of olive oil, rosemary, oregano, thyme and salt, then slowly cooked until the meat becomes tender and flavorful. This version of Devil's Chicken also includes the addition of very lean cured ham to make it even tastier. It is a perfect dish for spice lovers and pairs well with light, fresh side dishes.
Carefully prepare the chicken by opening it along the back and flattening it slightly with blows from a meat mallet, trying not to deform it; take a shallow pan, place it on the heat and warm it as usual; put the chicken in it, add 2 tablespoons of diet olive oil and cover it with a mixture made from the very lean cured ham carefully mixed with the oregano, thyme and rosemary
Brown on both sides, add a glass of water, cover the pan with a lid and cook for 45 minutes
