

Gran Farro is a delicious Italian first course based on spelt, beans and aromatic spices. Its origins date back to ancient times, when farro was a common staple of the Mediterranean diet. Boil the beans and purée them
Sauté the chopped aromatics, the prosciutto and the spices in the oil
Season with salt and pepper
Add the tomato and cook for 15 minutes
Strain the sauce, then add the beans, some of their cooking broth and the spelt
Cook for 40 minutes, adding more bean broth as needed
Serve with a drizzle of olive oil
