Pass the beef pulp and cooked ham through a meat grinder and collect the result in a bowl
Add the grated Parmesan, a pinch of nutmeg, the raisins rehydrated in warm water and squeezed, the pine nuts, the crumb of the bread roll soaked with broth, the necessary salt, and a grind of pepper
Carefully mix the ingredients, then bind everything with an egg yolk
Shape the mixture into many small, round, and uniformly sized meatballs, dip them in beaten egg with salt and pepper, then in breadcrumbs, and fry them in a pan with hot oil
When they are golden brown, remove them from the pan using a slotted spoon and place them on a sheet of absorbent paper to remove excess oil, then arrange them on a serving dish
Place the mustard in a small saucepan, dissolve it with vinegar, then add the flour mixed with three tablespoons of water, adjust the salt, and beat the mixture with a wooden spoon
Incorporate the remaining egg yolks and the juice of 1/2 lemon, and heat the sauce over low heat without bringing it to a boil
Pour the hot sauce over the meatballs
