

Grandma's Meatballs are a classic of Italian cuisine, made with a delicious combination of beef, cooked ham, grated Parmigiano cheese, pine nuts, and sultana raisins. Pass the beef and cooked ham through a meat grinder and collect the mixture in a bowl
Add grated Parmesan cheese, a pinch of nutmeg, raisins soaked in warm water and squeezed, pine nuts, the crumb of the bread soaked in broth, the necessary salt, and a grind of pepper
Carefully mix the ingredients and then bind everything together with an egg yolk
From the mixture obtained, make many small uniform round meatballs, dip them in beaten egg with salt and pepper, and in breadcrumbs, and fry them in a pan with hot oil
When they are well browned, remove them from the pan using a slotted spoon and place them on a sheet of absorbent paper to eliminate excess grease, then arrange them on a serving dish
Put the mustard in a small saucepan, dissolve it with vinegar, then add the flour mixed with three tablespoons of water, adjust with salt, and whisk the mixture with a wooden spoon
Incorporate the remaining egg yolks and the juice of 1/2 lemon, and heat the sauce over low heat without bringing it to a boil
Pour the hot sauce over the meatballs
