Clean the artichokes by removing the tougher leaves, cut them in half, and remove the hard inner part
Soak them for about ten minutes in acidulated water or with a handful of flour, then blanch them for a few minutes in salted water and drain
Slice the mozzarella thinly and chop the parsley
Butter a baking dish and lay a layer of artichokes on which you will place a slice of mozzarella, sprinkling everything with grated Parmesan and chopped parsley
Top with small knobs of butter and gratinate in a hot oven for about half an hour
