

Gratinated artichokes with mozzarella are a delicious side dish, perfect for accompanying meat or fish main courses. Their preparation takes a bit of time, but the final result is truly delicious. The artichokes are baked with soft, melting mozzarella and a sprinkle of Parmesan cheese. A must-try!




Clean the artichokes by removing the tougher leaves, cut them in half, and remove the hard inner part.
Soak them for about ten minutes in acidulated water or with a handful of flour, then blanch them for a few minutes in salted water and drain them.
Cut the mozzarella into thin slices and chop the parsley.
Butter a baking dish and place a layer of artichokes on which you will arrange a slice of mozzarella, sprinkling everything with grated Parmesan cheese and chopped parsley.
Top with knobs of butter and bake in a hot oven for half an hour.
