
Gratinated cabbage is a delicious side dish of green cabbage baked with a golden, crispy crust. This dish is perfect to accompany meats or delightful vegetarian dishes. Preheat the oven to 200 degrees Celsius (thermostat 6)
Trim the cabbage, wash it and cut it into strips
Cook it in a pot of boiling water until tender
Drain it and add the juniper berries
Melt 30 g of butter in a small pan, add the flour and stir over low heat for about two minutes
Remove from the heat and gradually pour in the milk and cream, stirring
Return to the heat and cook over low heat, stirring constantly, until the béchamel has thickened
Season with salt and pepper, add nutmeg and chili pepper
Grease a porcelain baking dish with 15 g of butter
Mix the cabbage and béchamel and pour everything into the dish
Sprinkle the preparation with grated cheese mixed with breadcrumbs and dot with the remaining butter
Bake for fifteen minutes
Then raise the oven temperature to 230 degrees Celsius (thermostat 7) and cook for another ten minutes until the surface is well browned
