Cut the grapefruits in half
Gently remove the seeds
Using a sharp pointed knife, detach the membrane from the pulp all around and then between each segment
Coat the surface of the grapefruits by spreading a little softened butter
Sprinkle with sugar and place under a hot grill for a few minutes or until a light golden gratin is achieved
Remove and serve
