

Green gnocchi are a tasty and colorful first course, made with a base of potatoes, flour, and spinach. They go perfectly with a simple seasoning of tomato puree, grated Parmesan cheese, and melted butter.
Boil the spinach, squeeze them and pass them through a sieve
Do the same with the potatoes and mix them with the spinach, flour, and a pinch of salt
Knead the dough and shape it into gnocchi about 2 cm
Heat the oil, add the tomato puree, season with salt, cook for a few minutes and add the cream
Cook the gnocchi and dress them with the sauce, a little butter and Parmesan cheese
