

Herb mayonnaise is a creamy and aromatic sauce, perfect for accompanying fresh vegetables or as a dressing for salads. Its preparation is simple and requires only a few minutes.


Put a small pot with water on the stove
When it boils, salt it and add the herbs and let it cook for 5 minutes
Drain and let cool, then press them to remove the water
Now make the mayonnaise
Put the two yolks in a bowl and beat them with a fork, then start adding the oil drop by drop while constantly stirring and always in the same direction
Continue until you have finished the oil
Add the juice of half a lemon and check the salt
If you prefer, you can make the mayonnaise with a blender or buy it ready-made, but it won't be the same
Now put the herbs in the blender to reduce them to a cream; add to the mayonnaise and mix gently and add curry to taste
