
Homemade minestrina is a simple and tasty dish, perfect for warming cold winter days. Mix the flour with the eggs, 1 tablespoon of Pecorino, 1 tablespoon of oil, salt, pepper and nutmeg
Roll out a thin sheet and divide it into 3 parts
From each part cut three different types of small pasta: farfalline (tiny bow-ties), quadrucci and small maltagliati
Slice the onion and soften it with 2 tablespoons of oil, add the broth and bring to a boil
Add the three types of small pasta and cook them until done
Serve with grated Pecorino cheese
