Knead the flour with the eggs, 1 tablespoon of pecorino, 1 of oil, salt, pepper, and nutmeg
Roll out a thin sheet and divide it into 3 parts
From each part, make 3 different types of pasta: farfalline, quadrucci, and small maltagliati
Slice the onion and sauté it with 2 tablespoons of oil, add the broth and bring to a boil
Add the 3 types of pasta and cook them
Serve with grated pecorino
