

The Hunyadi Cake is a rich and delicious cake, consisting of a layer of whipped egg whites, powdered sugar, egg yolks, chopped hazelnuts, and grated chocolate. At the center of the cake is a delicious pastry cream and whipped cream, enriched with gelatin for perfect consistency. The cake is covered with apricot and chocolate glaze. To complete everything, decorate with coating chocolate and buttercream.






Prepare the pastry cream, apricot glaze, and chocolate glaze following the guidance provided in the corresponding recipes
In a bowl, beat the egg whites with half of the sugar, then add the rest
In another bowl, mix the egg yolks and add the beaten egg whites, grated chocolate, and chopped hazelnuts
Draw 3 circles of 26 cm in diameter on 3 sheets of baking paper and fill them with the batter
Bake in a preheated oven at 200 degrees for about 20-25 minutes, then cover the disks with plastic wrap and let them cool
Pass the cold pastry cream through a sieve, then incorporate the whipped cream to which you have mixed the softened, squeezed, and dissolved gelatin in a little warm milk
Spread the first disk with a layer of cream, cover with the second disk also spread with cream, and place the last disk on top, pressing lightly
Evenly distribute any cream that may have spilled on the sides of the cake and let it cool for about an hour
Cover the entire cake with apricot glaze and then with chocolate glaze
Work the softened butter in a bowl until it has a creamy consistency, then incorporate the Italian meringue little by little, making sure it is well chilled
Finally, add the coating chocolate
