Kaiserschmarren is a famous Austrian dessert made from whipped egg whites, flour, and raisins. Its origin dates back to Emperor Franz Joseph I of Austria, who greatly enjoyed this dish. It is served dusted with powdered sugar and accompanied by fruit jam.
Mix the milk, flour, salt, and yolks until you get a smooth batter, then fold in the beaten egg whites with the sugar.
Heat some of the butter in a pan, pour in the batter, sprinkle the sultanas on top, and fry slowly. Flip everything and finish cooking in the oven.
At this point, break the batter into pieces with a fork, aiming for irregular pieces about 3 or 4 cm each. Pour the remaining butter over and toss everything.
Sprinkle with sugar and serve with stewed plums.
