Ketchup is a sauce made from tomato, onion, peppers and spices. It has a sweet and slightly spicy flavor. Mix the tomatoes, onions, peppers and garlic and simmer for at least 45 minutes until the peppers are tender
Pass everything through a fine sieve
Boil everything for another 30 minutes
Add all the other ingredients including the spice bag composed as mentioned above and contained in a cheesecloth bag
Let simmer for no less than two hours, three if necessary, stirring often until a very thick sauce is obtained. Remove the bag
Pour the mixture into sterilized, boiling glass jars and seal tightly
Alternatively, you can sterilize everything after sealing by immersing in a pot of water brought to a boil and boiled for about 45 minutes, then let cool in the container without touching
