

Baci di Dama are tasty, delicate cookies made with chopped hazelnuts, butter and flour. Their distinctive feature is the double biscuit layers joined by a dark chocolate ganache. Perfect to accompany tea or to enjoy as an after-meal dessert.
Toast the hazelnuts in the oven for 10 minutes at 180 degrees C
Remove the skins, place them in a food processor with 2 teaspoons of sugar and grind them into a powder
In a bowl combine them with the remaining sugar and the softened butter, then incorporate the flour. Shape the mixture into rolls about 3 cm in diameter, cut them into pieces and form small balls
Bake them in the oven for 18 minutes at 160 degrees C
Let them cool and pair them two by two, spreading a thin layer of melted chocolate between them

These lovely cookies are a Piedmontese classic, typical of the town of Tortona. Their name 'Baci di Dama' comes from the legend of a pair of lovers, a princess and a knight, who exchanged kisses through these sweet treats.
