Lamb chops a scottadito are a typical dish of Roman cuisine. These are very tender lamb chops, grilled to perfection, served hot and can be eaten with your hands. The term 'scottadito' refers to the fact that the chops are so hot they burn your fingers. A true delicacy to enjoy in good company!
Slightly flatten the lamb chops with a meat tenderizer, season them generously with salt and freshly ground pepper, grease them on both sides with butter or lard, and preferably cook them over charcoal or use a regular gas grill.
Turn them over a few times during cooking.
When the chops are cooked to perfection on both sides, place them on a plate and serve immediately, accompanied by a raw salad vegetable such as Treviso radicchio or endive.
Alternatively, serve them with mixed vegetables (artichoke hearts, white celery, fennel, radishes) with a dipping sauce.
In this second case, serve good olive oil, salt, and a pepper mill separately.
