

Abbacchio scottadito lamb chops are a typical dish of Roman cuisine. They are very tender lamb chops, grilled to perfection, served hot and can be eaten with the hands. The term scottadito refers to the fact that the chops are so hot they scald the fingers. A true delicacy to enjoy in good company!
Slightly flatten the abbacchio chops with a meat mallet, season them generously with salt and pepper (use freshly ground pepper), brush both sides with butter or lard and cook them preferably over charcoal embers or use a regular gas grill
Turn them a few times during cooking
When the chops are cooked to the right degree on both sides, place them on a plate and serve immediately, accompanied by a raw salad green such as radicchio di Treviso or endive
Or serve them with mixed vegetables (artichoke hearts, white celery, fennel, radishes) served with a pinzimonio (raw vegetable dip)
In this case, serve good olive oil, salt and a peppermill on the side
