Cook 250 ml of natural water with sugar and zest on low heat for 10 minutes
Mix the obtained syrup with lime juice and the remaining water, pour the mixture into an ice cream maker (if not available, put the mixture in the freezer, stirring every hour until it is set)
A little before the sorbet is ready, fold in the whipped egg white
Serve with chopped fruit
