Cook 250 ml of still water with the sugar and zest over low heat for 10 minutes
Mix the obtained syrup with the lime juice and the remaining water, pour the mixture into an ice cream maker (if unavailable, place the mixture in the freezer, stirring it every hour until it thickens)
Shortly before the sorbet is ready, fold in the stiffly beaten egg white
Serve with fruit pieces
