Liver crostini are a classic Italian appetizer. Made with chicken livers, prosciutto, and anchovies, they are rich in intense and contrasting flavors. A simple dish to prepare but full of flavor.
Finely crush the liver, sauté it in a little oil, add the prosciutto finely chopped with a mezzaluna, let it cook in the pan over moderate heat for 5-6 minutes, add the anchovies and let them melt with the heat, add 3 tablespoons of broth, a pinch of cinnamon, and 1 tablespoon of vinegar, and check that the mixture is well-seasoned with salt.
Cut the white bread in half and toast the slices on both sides, then place the sauce on each slice.
Serve hot.
