Liver crostini are a classic Italian appetizer. Prepared with chicken livers, prosciutto crudo and anchovies, they are rich in intense, contrasting flavors. A simple dish to prepare but full of great taste.
Finely pound the liver, sauté it in a little olive oil, add the prosciutto finely chopped with a mezzaluna, cook in the pan over moderate heat for 5-6 minutes, add the anchovies and let them melt from the heat, add 3 tablespoons of broth, a pinch of cinnamon and 1 tablespoon of vinegar, and check that the mixture is seasoned with salt.
Cut the Pancarré in half and brown the slices on both sides, then spread the sauce on each slice.
