

The delicious Lobster with Beans is a Mediterranean dish that combines the elegance of lobster with the creamy texture of beans. The onion and garlic add aromatic flavor, while the dry white wine and brandy provide a refined nuance of taste. Fresh parsley and basil complete the dish with a note of freshness. Perfect as a second course for a special dinner.















Sauté the onion in oil then add the garlic (chopped finely)
Take the lobster (better if you buy it frozen so we don't cut it live) and cut it in half lengthwise starting from the belly
Clean it from the entrails (the green liver can be left) and place it open side down in the pan
Now add the white wine and the brandy
Flame the brandy to remove the alcohol taste (be careful where you placed the bottle!)
Add half a stock cube and the previously boiled tomatoes peeled and chopped finely
Then also add the beans
Everything will have quite a liquid appearance, simmer until the sauce thickens (30-40 minutes) meanwhile add salt and pepper
At the end of cooking, sprinkle with basil
