Preparation

  1. STEP 1 OF 3

    Boil the spinach, squeeze and chop them finely, place them in a bowl and add the ricotta, mixing the dough until it becomes soft, season with salt and a little pepper; then add the eggs and grated Parmesan cheese.

  2. STEP 2 OF 3

    Now form small balls, then roll them in flour and immerse them one at a time in boiling water, removing them with a skimmer after a few minutes when they float to the surface.

    Season with butter and cheese.
