Beef broth with cheese crespelle is a traditional Italian dish, ideal for cold days. The soft crespelle and the flavorful beef broth blend together to create an irresistible comfort food. The crespelle are filled with grated Parmigiano cheese and chopped chives, and then fried in crispy melted butter. They are served in a hot and aromatic beef broth. This dish originates from northern Italy but is loved throughout the country.

In a bowl, mix milk with flour, egg, melted butter, cheese, chives, salt, and pepper, and let the mixture rest for half an hour
Melt a piece of butter in a pan, pour in a little of the prepared mixture, and move the pan so that the batter spreads evenly
Let the crespella brown on one side, then flip it and cook it on the other side as well
Continue as described until the batter is finished
As they are ready, stack the crespelle on top of each other, let them cool, and then cut them into strips
Distribute the hot beef broth into eight deep plates, placing some strips of crespelle in each, and serve
