Meat broth with cheese crepes is a traditional Italian dish, ideal for cold days. The soft crepes and the flavorful meat broth blend together to create irresistible comfort food. In a bowl, mix the milk with the flour, the egg, the melted butter, the Parmigiano, the chopped chives, salt and pepper, and let the resulting batter rest for half an hour.
Melt a little piece of butter in a pan, pour a bit of the prepared batter into it and tilt the pan so that the batter spreads evenly.
Let the crepe brown on one side, then flip it and cook it on the other side as well.
Proceed as described until the batter is used up.
As they are ready, stack the crepes on top of each other, let them cool, then cut them into strips.
Divide the hot meat broth among eight soup plates, place some of the crepe strips in each, and serve.
