
Meatloaf in green sauce is a tasty first course typical of Northern Italy. Sauté the onion in oil and butter, add the meat and brown it, then turn off the heat and add the eggs, breadcrumbs, salt, pepper, chopped parsley, ricotta, crumbled marjoram, and a generous amount of grated Parmesan cheese.
Meanwhile, boil the potatoes.
Once cooked, pass them through a food mill and add them to the previously prepared mixture, mix well, then spread the mixture on a cloth, shape it like a salami, tightly close both ends, and boil it for about two hours immersing it in cold water with broth aromatics.
Once cooked, drain it and let it cool before opening the cloth.
Slice it and arrange it on a serving plate accompanied by cold green sauce.
