Meringues are crisp and light desserts made from egg whites and sugar. They originate from France and are very popular in Italy as well, especially during the Christmas holidays. Meringues can be served on their own or as a base for other sweet preparations.
Take 5 egg whites and place them in the large bowl of the food processor with the whisk attachment and a pinch of salt
Blend by alternating the various speeds until everything becomes firm, add 250 g of powdered sugar while the processor continues to mix at the lowest speed, and finally a tablespoon of lemon juice
Bake 16 meringues placed on a sheet of baking paper for 2 and a half hours at 80 degrees in a fan oven
The only 'secret' for the egg whites to whip well is that they are free of any yolk traces
