
Meringues are crisp, light sweets made from egg whites and sugar. They originated in France and are also very popular in Italy, especially during the Christmas holidays. Meringues can be served on their own or used as a base for other sweet preparations.
Take 5 egg whites and put them in the tall bowl of the food processor with the whipping attachment and a pinch of salt
Whisk, alternating the speeds until everything is very stiff; add 250 g of icing sugar while the machine continues to mix at the lowest speed and finally add one tablespoon of lemon juice
Bake 16 meringues placed on a sheet of baking paper for 2 and a half hours at 80 degrees Celsius in a fan oven
The only 'secret' for egg whites to whip well is that they contain no trace of yolk
