

Milanese-style lamb cutlets are a typical dish of Milanese culinary tradition. They are breaded lamb cutlets fried in vegetable oil and butter. Crispy and flavorful, they are perfect to enjoy as an appetizer or main course.
Buy cutlets about a finger thick
Using a knife, remove the fat that covers the last 5-6 cm of the bone and expose the bone
Melt the butter and brush each cutlet with it; then coat them lightly with breadcrumbs, dip them in beaten salted eggs and once again in the breadcrumbs
Let them rest for a couple of hours so that the coating dries well
Then fry them in oil over high heat for a few minutes so that a nice golden crust forms on the outside
Then lower the heat and fry for a few more minutes so the meat cooks perfectly inside without burning on the outside
Drain them on kitchen paper and serve very hot
