Milanese-style lamb chops are a typical dish of Milanese culinary tradition. These are lamb chops breaded and fried in seed oil and butter. Crunchy and flavorful, they are perfect to enjoy as an appetizer or main course.
Purchase lamb chops that are slightly thicker than a finger
With a knife, remove the fat covering the last 5-6 centimeters of bone and expose them
Melt the butter and brush each chop with it; then coat them in a thin layer of breadcrumbs, followed by beaten and salted eggs, and once more in breadcrumbs
Let them rest for a couple of hours so the breading dries well
Then fry them in oil over high heat for a few minutes until a nice golden crust forms on the outside
Lower the heat and fry for a few more minutes so the meat cooks perfectly inside without burning on the outside
Drain the excess oil on kitchen paper and serve them hot
