
The mixed grill is a traditional English dish consisting of a selection of grilled mixed meats, such as sausages, bacon, lamb kidneys and lamb cutlets. Pat the lamb cutlets dry and pepper them
Heat a large cast-iron griddle
Remove the membrane that surrounds the kidneys, cut them in half and use scissors to remove the central sinew
Wash and dry the tomatoes
Cut them in half
Squeeze them lightly to remove the seeds
Remove the rind from the slices of bacon
Prick the sausages with a fork
When the griddle is very hot, grill the sausages for five minutes on one side
Pepper the cutlets, place them on the griddle and turn the sausages
Grill for four minutes
Melt the butter in a small saucepan
Turn the sausages and the cutlets and brush them with the melted butter
Place the kidneys on the griddle and brush them with the melted butter
Salt and pepper them
Add the halved tomatoes, drizzle them with a little oil, and season with salt and pepper
Grill for two minutes
Flip the kidneys, brush them with the melted butter, salt and pepper them again. Add the slices of bacon
Grill for another two minutes, turning the bacon slices halfway through cooking
Arrange on a warmed plate and serve immediately
