

Mozzarella crostoni are a delicious appetizer typical of Italian cuisine. They consist of slices of crispy Tuscan bread, melting mozzarella, aromatic sage and fresh cherry tomatoes. They are then gratinated in the oven and served hot. Ideal to enjoy during an aperitif or as a light starter.










Prepare the sauce: in a small saucepan with the oil sauté the chopped parsley and onion, moisten with the broth and stir with a wooden spoon
Cut the Tuscan bread into 16 equal slices about 1/2 cm thick
Blanch the tomatoes in a pot of boiling water, peel them and remove the seeds; slice the mozzarellas
Arrange eight slices of bread on the work surface; on each place two slices of mozzarella, a sage leaf and some tomato strips, season with salt and pepper, then cover with the remaining slices of bread
In a bowl beat the egg with a pinch of salt, quickly dip the sandwiches so they are coated on both sides, then pass them in the breadcrumbs
Secure the assembled sandwiches with two wooden skewers, place them in a pan with plenty of hot olive oil and fry over medium heat until the bread is golden and crispy
Transfer the crostoni to a serving plate, sprinkle them with a little of the prepared sauce and serve immediately, passing the remaining sauce separately
