Clean the mussels well and open them raw with a knife, removing the empty shell and leaving the mollusks in the other; also collect and filter the water that comes out of the shells
Now mix the mussel liquid with a splash of oil, one of vinegar, a little lemon juice, and minced garlic
Place the mussels in an oil-greased pan, sprinkle them with the aforementioned mixture, top with chopped parsley, drizzle with the rest of the oil, and sprinkle a layer of breadcrumbs on top
Bake at 200 degrees and let gratinate
