Mussels with green tomatoes are a delicious seafood dish typical of Mediterranean cuisine. The mussels are cooked together with green peppers and seasoned with thyme, garlic, olive oil and salt. The sweet flavor of the mussels pairs perfectly with the acidity of the green tomatoes, creating a unique taste balance. This recipe is perfect to enjoy as a second course at a summer dinner.
Thoroughly clean the mussels under running water
Put them in a pan with a drizzle of oil and a clove of garlic, and cook over high heat until they open
Remove the mollusks from their shells and set them aside
