Mustaccioli are delicious traditional sweets from the Campania region, particularly from the city of Naples. They are shortcrust cookies enriched with cocoa and flavored with vanilla. Their shape resembles a small elongated cookie and they are often decorated with a delicious apricot jam. They are perfect to enjoy with a cup of coffee or as a dessert after a meal.
Sift the flour onto the work surface, arranging it in a mound
Make a well in the center and add 300 g of powdered sugar, a pinch of baking powder, and the vanilla powder
Add a few tablespoons of water and work everything until you obtain a consistent and homogeneous dough; let it rest for a quarter of an hour
After this time, roll out the dough with a rolling pin to form a not too thin sheet and cut it into strips 10 cm wide
Cut these into diamonds, then knead the leftovers and proceed in the same way
Place the cookies on an oiled baking sheet, brush them with a little water, and bake them in the oven at 180 degrees for 8 minutes, turning them halfway through cooking
Finally, remove from the oven and let cool
Place two tablespoons of jam, one of powdered sugar, and half of water in a small saucepan and cook for 5 minutes, stirring continuously with a wooden spoon so that the jam melts
In another container, mix the rest of the sugar and the glucose, then gradually incorporate the cocoa, and then thicken the mixture over very low heat
Spread a thin layer of the glaze thus prepared on the surface of the mustaccioli, on this form a thin layer of jam, and finally cover everything with another layer of glaze
Let the cookies dry on a tray, then serve them or store them in tin boxes
