
Mustaccioli are delicious traditional pastries from the Campania region, particularly the city of Naples. They are shortcrust biscuits enriched with cocoa and flavored with vanilla. Their shape resembles a small elongated cookie and they are often decorated with a delicious apricot jam. They are perfect to enjoy with a cup of coffee or as an after-dinner dessert.





Sift the flour onto the work surface, forming a well
Make a hollow in the center and place 300 g of powdered sugar, a pinch of baking powder and the vanilla powder
Add a few spoonfuls of water and work everything until you obtain a firm, homogeneous dough; let it rest for a quarter of an hour
After this time, roll out the dough with a rolling pin into a sheet not too thin and cut it into strips 10 cm wide
Cut diamonds from these strips, then knead the scraps and proceed in the same way
Place the cookies on a baking tray greased with oil, brush them with a little water and bake in the oven at 180 degrees C for 8 minutes, turning them halfway through baking
Finally, remove from the oven and let cool
Put two tablespoons of jam, one tablespoon of powdered sugar and half a tablespoon of water in a small saucepan and cook for 5 minutes, stirring continuously with a wooden spoon so that the jam melts
In another pan mix the remaining powdered sugar and the glucose, then gradually incorporate the cocoa and thicken the mixture over very low heat
Spread a layer of the glaze prepared this way over the surface of the mustaccioli, form a thin layer of jam on top of it and finally cover everything with another layer of glaze
Let the cookies dry on a tray, then serve them or store them in tin boxes
