
Necci are sweet crepes made from chestnut flour, filled with fresh ricotta. They are a traditional Tuscan dessert with a long history and great popularity.





Mix the flour with water and salt until the batter is quite runny, and make many small pancakes (in a pan with oil or using a crepe maker). Then place some ricotta and a pinch of sugar in the center of each pancake and roll them like a cannolo.
