Nests and beans are a delicious dish typical of Italian cuisine. Tagliatelle pasta is seasoned with a flavorful borlotti bean sauce enriched with potatoes, carrots, tomatoes, onions, and garlic. Everything is flavored with a broth cube and extra virgin olive oil. A tasty and nutritious first course!
In the pressure cooker, sauté the chopped vegetables (potato, carrot, tomato, onion, and garlic) with the oil
Then add the beans (reserve a tablespoon), the broth cube, and about 75 cl of water
Close the pot and cook for about 15 minutes from the whistle
Once cooking is complete, pass everything through a food mill, then add the reserved beans, bring back to the heat, and when boiling, adjust the salt and cook the nests
At the end, the bean soup should be quite creamy
This dish can be served cold, making it suitable for summer as well
