

Nidi e fagioli are a delicious dish typical of Italian cuisine. The tagliatelle-type pasta is dressed with a flavorful borlotti bean sauce enriched with potatoes, carrots, tomatoes, onions and garlic. Everything is flavored with a stock cube and extra-virgin olive oil. A tasty and nutritious first course!

















In the pressure cooker, sauté the diced vegetables (potato, carrot, tomato, onion and garlic) in the oil.
Then add the beans (reserve a spoonful), the stock cube and about 75 cl of water.
Close the pot and cook for about 15 minutes from the whistle.
When cooking is finished, pass everything through a food mill, then add the reserved beans, return to the heat and, once boiling, adjust the salt and cook the nests in it.
At the end the bean soup should be fairly creamy.
This dish can be served cold, so it is also suitable for summer.
