Preparation
- STEP 1 OF 8
Prepare a shortcrust pastry with the flour, salt, butter, 60 g of sugar, one egg yolk, and water
- STEP 2 OF 8
Let it rest for 30 minutes in the refrigerator, then line a cake tin with three-quarters of the dough
- STEP 3 OF 8
Mix the cornmeal with the whole egg and the egg white
- STEP 4 OF 8
Add the cheese, the remaining sugar, the orange juice and zest, and finally the cream
- STEP 5 OF 8
Mix well
- STEP 6 OF 8
Place the mixture in the lined cake tin and bake at 220 degrees for about 10 minutes until the filling begins to set
- STEP 7 OF 8
Remove from the oven and reduce the temperature to 160 degrees, decorate with strips made from the remaining dough, and leave in the oven for another 35 minutes
- STEP 8 OF 8
Serve cold
