Preparation

    Prepare a shortcrust pastry with the flour, salt, butter, 60 g of sugar, one egg yolk, and water

    Let it rest for 30 minutes in the refrigerator, then line a cake tin with three-quarters of the dough

    Mix the cornmeal with the whole egg and the egg white

    Add the cheese, the remaining sugar, the orange juice and zest, and finally the cream
