Prepare a shortcrust pastry with the flour, salt, butter, 60 g of sugar, an egg yolk and the water
Let rest for 30 minutes in the refrigerator then use three quarters of the dough to line a cake tin
Mix the cornmeal with the whole egg and the egg white
Add the cheese, the remaining sugar, the orange juice and zest, and finally the cream
Mix well
Put the mixture into the lined cake tin and bake at 220 degrees Celsius for about 10 minutes, until the filling begins to set
Remove from the oven and reduce the temperature to 160 degrees Celsius, decorate with strips made from the remaining dough and leave in the oven for another 35 minutes
