Preparation

Butter and flour a 24 cm diameter springform pan, line it with the pastry, cover it with aluminum foil and dried beans, and place it in a preheated oven at 180 degrees for about 25 minutes

Caramelize a few tablespoons of sugar with a little water, immerse the peel of 1/2 orange cut into strips, then let it cool on an oiled plate
