
Paccheri with Vegetables is a tasty first course made with paccheri, eggplant, peppers, smoked hard ricotta and curly basil. It is a light and colorful dish, perfect for summer.



Clean the eggplant, cut it into thick slices, salt them and let them sweat
Cook the peppers until softened, peel and seed them; cut into small cubes
Dry the eggplant and cut it into cubes
Sauté the eggplant and peppers in plenty of oil together with the shallot; cook the paccheri until al dente, drain them, add them to the sauce and toss with the ricotta
Finish with fresh basil
