Paella is a delicious main dish typical of Spanish cuisine, particularly from the Valencia region. To make paella, it is best to use the special pan (paella in Catalan) which is flat with strongly flared edges, now available (with some effort) even in Italy

I tried using a clay pot, but it ends up being something else like 'arros a la marinera' and not a paella
First, clean and cook the mussels (perhaps a few more so you can prepare a Catalan-style mussel appetizer), shell them (remove one shell from the most beautiful ones for garnish), set them aside, and filter their cooking water, which should also be set aside
Do the same with the shrimp and scampi
Blanch the peas and bell peppers in a little water
Set aside their water as well
Put a few tablespoons of oil in the pan and brown the chicken, rabbit, and sausage, adding the squid after a few minutes
