Pancotto fritters are a delicious Italian appetizer. These soft fritters are made with country-style bread soaked in vegetable broth and enriched with garlic, tomato preserve, marjoram and grated cheese. They are then fried in extra-virgin olive oil until a golden crust forms. The fresh flavor of lemon and the aroma of anise seeds make these fritters unique. Serve them hot accompanied by a sauce or mayonnaise of your choice.
