Panforte is a typical Sienese Christmas cake, with an intense and spicy flavor. Made with toasted almonds, toasted hazelnuts, assorted candied fruits diced, sugar, honey, flour, cocoa powder, and ground cinnamon, it is wrapped in wafer sheets and dusted with powdered sugar.
Mix the flour, almonds, and hazelnuts, chop the candied fruits, cinnamon, and cocoa, and combine them with the honey and sugar that you have previously melted over low heat in a non-stick pan.
Mix all the ingredients well until you obtain a homogeneous mixture and in the meantime line a cake pan using the wafer sheet.
Pour all the mixture, leveling it with a buttered knife, and immediately cover with a second wafer sheet.
Bake the panforte for about 30 minutes at 150 degrees and once baked and cooled, sprinkle it generously with powdered sugar.
