Immerse the peaches in a saucepan of boiling water for 5 minutes
Drain them, run them under cold water and peel them
Cut them in half and remove the pit
In a saucepan cook the wine with the sugar, one packet of vanilla sugar, the clove and a pinch of nutmeg for about 10 minutes
Add the peaches, let them cook for another 10 minutes and then drain them
Reduce the syrup, pour it over the peaches and let them macerate for half a day
