Rice-stuffed peaches are a traditional Italian dessert, typical of the Lombardy region. It is a simple yet delicate preparation in which peaches are filled with sweet rice and the irresistible flavors of Amaretti biscuits and lemon. A perfect dessert to conclude a summer meal or to delight lovers of spoon desserts.
Cook the rice in the milk to which you have added a pinch of salt and the grated lemon zest
When it is cooked, remove it from the heat and add the crumbled Amaretti biscuits, 50 g of sugar, the egg yolks, the butter and finally the egg whites beaten until stiff
Cut the peaches in half, remove the stone, scoop out the flesh (which you will mix with the rice) and fill the cavity with the mixture
Place them in a buttered baking dish, sprinkle them with sugar, pour the Marsala wine and bake for about 20 minutes
You can serve them either hot or cold
