Peaches with rice are a traditional Italian dessert, typical of the Lombardy region. It is a simple yet delicate preparation, where peaches are filled with sweet rice and irresistible aromas of amaretti biscuits and lemon. A perfect dessert to conclude a summer meal or to delight lovers of spoon desserts.

Boil the rice in milk to which you have added a pinch of salt and the grated peel of the lemon
When it is cooked, take it off the heat and add the crushed amaretti, 50 g of sugar, the egg yolks, the butter, and finally the whipped egg whites
Cut the peaches in half, remove the pit, scoop out the pulp (which you will mix with the rice) and fill the hollow with the mixture
Place them in a buttered baking dish, sprinkle them with sugar, pour the marsala, and bake for about 20 minutes
You can serve them either hot or cold
