Penne pasta with bell pepper and tomato sauce is a tasty and colorful dish, perfect for a light lunch or dinner. Sauté the onion sliced into thin slices in the olive oil over medium heat until softened
Add the bell peppers cut into small pieces (almost minced) and continue cooking for about 8 minutes still over medium heat
Add the tomatoes peeled and seeded and the anchovy fillets cut into pieces
Season with salt and chili pepper
Continue cooking for another 10 minutes or so and finally add the chopped parsley
Toss the pasta cooked al dente with this sauce and sprinkle with grated Parmigiano
