
Penne with Eggplant and Sausage
A traditional Italian dish that combines the delicacy of eggplant with the bold flavor of sausage. Penne pasta perfectly complements the intense and spicy flavors of this recipe.
Ingredients
- Penne pasta
300G - Eggplant
1 - Finely chopped onion
1 - Olive oil
2Tablespoons - Crumbled sausage
100G - Dry white wineto taste
- Diced red bell pepper
1 - Hot chili pepper
1Piece - Peeled and chopped san marzano tomatoes
400G - Oregano
1Pinch - Chopped parsley
1Bunch - Garlic
1Clove - Grated parmesan cheese
4Tablespoons - Saltto taste
- Pepperto taste
Preparation
- STEP 1 OF 8
Pour the oil into the pan, let the onion soften, add the sausage and brown for 2/3 minutes
- STEP 2 OF 8
Pour in the wine and let it evaporate over high heat
- STEP 3 OF 8
Add the diced eggplant, bell pepper, chili pepper and brown
- STEP 4 OF 8
After 5 minutes, add the tomatoes, oregano, salt, and pepper
- STEP 5 OF 8
Cover and cook for 20 minutes

Then add the chopped parsley and garlic and cook for another 7/8 minutes
- STEP 7 OF 8
Drain the pasta al dente and toss it with the sauce after removing the chili pepper

Serve hot, sprinkling with Parmesan
