  • Dry white wineto taste
  • Diced red bell pepper1

  • Peeled and chopped san marzano tomatoes400G
  • Oregano1Pinch
  • Chopped parsley1Bunch
  • Garlic1Clove
  • Grated parmesan cheese4Tablespoons

Preparation

    Pour the oil into the pan, let the onion soften, add the sausage and brown for 2/3 minutes

    Pour in the wine and let it evaporate over high heat

    Add the diced eggplant, bell pepper, chili pepper and brown

    After 5 minutes, add the tomatoes, oregano, salt, and pepper

    Cover and cook for 20 minutes

    Then add the chopped parsley and garlic and cook for another 7/8 minutes

    Drain the pasta al dente and toss it with the sauce after removing the chili pepper

    Serve hot, sprinkling with Parmesan
