Chop the almonds in small batches, adding 1 teaspoon of sugar each time
Transfer the almond powder to a bowl, add the remaining sugar, whip 1 egg white until stiff, then fold it into the almonds

With moistened hands, pinch off small pieces of the dough one at a time and shape them into soft balls, then dip them in the remaining egg white lightly beaten and placed on a plate
