Wash the potatoes well and boil them with the skin in salted water
Drain them, peel and pass them through a sieve
Put the puree in a saucepan, add a pinch of nutmeg, a whole egg and a yolk, the cheese, pepper and mix well
Shape the mixture into balls and flatten them, then coat them in flour
Heat the butter and oil in a cast iron pan, place the fritters next to each other and fry them on both sides over moderate heat
Drain the fritters from the cooking fat and let them cool completely before serving
