

Potato fritters are a tasty side dish made with grated potatoes, eggs, Parmigiano cheese and flavored with nutmeg. They are crispy on the outside and soft inside, perfect to serve as an accompaniment to meat, fish or vegetables. Potato fritters are a typical dish of Italian cuisine and are particularly popular in the regions of Northern Italy.
Wash the potatoes well and boil them with the skins on in salted water
Drain them, peel them and press them through a sieve
Put the mashed potatoes in a saucepan, add a pinch of nutmeg, one whole egg and one yolk, the cheese, season with pepper and mix well
Shape the mixture into balls and flatten them, then coat them in flour
Heat the butter and oil in a cast-iron pan, place the fritters side by side and fry them on both sides over moderate heat
If you want to make them more flavorful and substantial, add 150 g of fresh minced sausage to the potatoes
Drain the fritters from the cooking fat and let them cool completely before serving
